Kale and apple salad
Ingredients (serves 1)
- 50g kale
- 1 medium apple, chopped into bite size pieces
- 1 boiled egg, sliced
- 1.5 tsp olive oil
- 1 tsp lemon juice
- 1 tsp Dijon mustard
- Black pepper to taste

Method
- Remove the thick stems and chop the kale into bite size pieces.
- Combine the kale, green apple and boiled egg in a bowl.
- Prepare the dressing by mixing together the olive oil, lemon juice and mustard.
- Add the dressing to the salad and enjoy!
