Kale and apple salad

Ingredients (serves 1)

  • 50g kale​
  • 1 medium apple, chopped into bite size pieces​
  • 1 boiled egg, sliced​
  • 1.5 tsp olive oil​
  • 1 tsp lemon juice​
  • 1 tsp Dijon mustard​
  • Black pepper to taste

Method

  1. Remove the thick stems and chop the kale into bite size pieces.​​
  2. Combine the kale, green apple and boiled egg in a bowl. ​
  3. Prepare the dressing by mixing together the olive oil, lemon juice and mustard.​
  4. Add the dressing to the salad and enjoy!
