Tomato and basil soup

215 kcal/serving, negligible carbohydrate/serving. Serves 2

Ingredients

  • 1 medium onion, chopped
  • 1 carrot, chopped
  • 1 celery stick, chopped
  • 1 garlic clove, crushed
  • 1 can chopped tomatoes
  • 1 tbsp tomato paste
  • 2 tbsp olive oil
  • 1 handful fresh basil leaves
  • Pepper and oregano to taste

Method

  1. Place the onions, celery, carrots, garlic and olive oil in a pan and cook until the onions are translucent.
  2. Add the tomato paste and some oregano and cook for an additional 3 minutes.
  3. Add the canned tomatoes and 1.5L of boiling water.
  4. Leave to simmer over a gentle heat for 20-30 minutes.
  5. Season with some additional pepper to taste.
  6. Enjoy!
