Oven baked salmon

400 kcal/serving, 40g carbohydrates/serving. Serves 1

Ingredients

  • 110g salmon fillet
  • 4 new potatoes (egg-sized)
  • 100g green beans
  • 5 cherry tomatoes, halved
  • 6 black olives in brine, pitted and halved
  • 1 tsp balsamic vinegar
  • black pepper to taste

Method

  1. Preheat the oven to 200C
  2. Place the salmon fillet on a baking tray and bake for 20 minutes
  3. Meanwhile, boil the green beans for around 10 minutes, until soft
  4. Boil the new potatoes for 10 minutes until soft
  5. Place the green beans, tomatoes and olives on a serving dish and season with balsamic vinegar
  6. Add the new potatoes and season with black pepper
  7. Combine the salad and potatoes with the salmon and enjoy.
