Kale and apple salad

- 100g kale
- 1 green apple, chopped
- 2 eggs, boiled
- 1 tbsp olive oil
- 2 tsp lemon juice
- 1 tsp Dijon mustard
- Pepper to taste
- Combine the kale, green apple and eggs in a bowl.
- Prepare the dressing by mixing together the olive oil, lemon juice and mustard.
- Add the dressing to the salad and enjoy!
