Greek salad with a twist

- 110g mixed salad leaves
- 4 cherry tomatoes, halved
- 6 black olives in brine
- ¼ cucumber, chopped
- ½ small red onion, cut into half moon slices
- 1 red pepper, chopped
- 1 tbsp hummus
- 1 tbsp Greek yoghurt
- 1 tsp mustard
- 1 tsp dried oregano
- Combine the salad leaves, cherry tomatoes, black olives, cucumbers, red onions and red pepper in a bowl. Season with dried oregano.
- Prepare the dressing by mixing together the hummus, yoghurt and mustard.
- Combine the salad with the dressing and enjoy!
