Egg and avocado on toast

Ingredients | Serves 1

  • 1 medium slice of wholemeal bread​​
  • 1 egg​​
  • ½ medium avocado​​
  • Squeeze of lemon (optional)​​
  • ½ tsp chilli flakes (optional)

Method

  1. Add water to a depth of 5cm to a small saucepan and bring to a boil. ​​
  2. Crack the egg into a bowl.​​
  3. Gently tip the egg into the saucepan and cook for 2 minutes.​​
  4. Take the saucepan off the heat and leave for 8-10 minutes.​​
  5. While the egg is cooking, place the bread into a toaster.​​
  6. Scoop out half a medium avocado into a bowl and mash with a fork.​​
  7. Add a squeeze of lemon juice and ½ tsp of chili flakes (if using) to the avocado.​
  8. Scoop the egg using a slotted spoon and drain over some paper towel.​​
  9. Place the mashed avocado on the toast, and then place the poached egg on top and enjoy!
